WHERE IT ALL BEGAN...

When I was growing up, my family owned and operated one of the most successful Italian bakery businesses in Fairfield County, CT., Pacelli’s Bakery. My father, Lou, was the cake decorator. In spite of having serious baker’s asthma, Dad would show up each and every day and place a surgical mask over his nose and mouth to somewhat fend off the plumes of flour that would most assuredly cause him to gasp for air. He then proceeded to create, freehand, some of the most beautiful and unique wedding cakes anyone had ever seen. Dad had passion.  

With my father working 100 hours a week at the family business, my mother, Connie, ran our home — raising and feeding six kids. Mom was magician when it came to stretching a dollar, a master gardener when it came to growing kids, and the “MacGyver” of the kitchen. Give her a celery stalk and a chicken bone and she could create a feast! Mom too had passion.

It is not surprising that I inherited a passion for “bake-a-nomics” — perfecting my best recipes for baking grand and sumptuous treats on a large scale. After 35 years of the redefining of my recipes, I feel they now define me.

My sweets, simply put, are delicious. And made with the same care and wholesome ingredients my family has used in since the 1930’s  The human body will not be able to identify any of my ingredients as anything other than wonderful food that was meant to nourish our bodies.
